Jump to RecipeSeptember 26 is the year’s second National Pancake Day! Get those hotcakes on the griddle, it’s time to prepare some pancakes! And let’s make it healthy! Today everything is about THE breakfast dish of Northern America. I will share with you a nice recipe of my Healthy Pancakes.

Why I consider my Pancakes as healthy?
Well, let’s start with the flour, instead of the normal wheat flour, which is sometimes even bleached and has almost not nutritional impact on your body, only calories, I work with a whole wheat one. Meaning the entire wheat core is used, including skin. And this is the important part, all the essential vitamins and minerals are within the skin and this is what we want! Secondly, instead of refined sugar, I will use coconut sugar to sweeten the recipe. Find further information to refined sugar and alternatives in this post here.
Lastly I am adding some protein powder to my recipe, which gives the recipe more stability and I can reduce the amount on flour.
FAQ to my recipe
Of course you can, I only like the “nutty” taste of the almond drink within my pancakes
Just replace the flour with a gluten-free flour, made out of rice for example.
Absolutely not, you can leave it away, but you will need to add 1-2 tbsp more on flour.

Healthy Pancakes
Equipment
- 1 cutting board
- 1 cooking knife sharp
- 1 blender even though Gordon Ramsey would kill me for this 😉
- 1 frying pan
Ingredients
Preparation Pancake Dough
- 8 tbsp whole wheat flour
- 2 tsp coconut sugar
- 2 tsp baking powder
- 10 g protein powder
- 2 pcs eggs
- 100 ml almond drink
- 1 pinch salt
- 10 g butter for frying the pancakes
Plating
- 4 pcs strawberries
- 200 g papaya
- 1 tbsp Greek yogurt
- 1 tbsp maple syrup
- 2 pcs mint leaves
Instructions
Preparation Pancake Dough
- Add the flour, coconut sugar, baking powder, protein powder, eggs, almond drink and salt in the blender and blend smoothly. I guess Gordon Ramsey would kill me for this 😉 , but it works very well!
- In a frying pan add some butter and bake six small golden brown pancakes in it.
Preparation Plating
- For the plating, remove the skin from the papaya and slice into wedges. Wash the strawberries and remove the green leaves, cut into half. Have the greek yogurt, mint leaves and maple syrup ready.
- For the plating arrange papaya and pancakes on a plate, garnish with strawberries and mint, top it with Greek yogurt and maple syrup.
